Turtle Cheesecake Recipes

 

Mmmmm, turtle cheesecake! I don’t mind having a piece of turtle pie as the evening winds down, EVER. Bring it on! Try either one of these recipes and learn the true meaning of selfishness!

Turtle Pie Cheesecake

Ingredients

Crust:

2 cups vanilla wafer crumbs

6 tbsp melted butter

Filling:

5oz can evaporated milk

16 oz cream cheese, softened

1 tsp vanilla

1 cup chopped pecans

½ cup sugar

2 eggs

½ cup melted chocolate chips

1 cup caramel squares

Instructions

Crust:
Preheat oven to 350 degrees. Mix and spread ingredients in a 9” spring form pan. Bake 10 minutes, remove and cool.

Filling:
Melt the caramel and the milk until smooth and pour over crust. Then sprinkle with pecans. In a bowl mix the cream cheese, sugar and vanilla well. Add eggs one at a time, mixing well between each. Then add the melted chocolate chips, keep mixing. Pour mixture over pecans and bake 40 minutes. Remove and cool.

Turtle Pecan Cheesecake

Ingredients

2 cups vanilla wafer crumbs

½ cup butter,

melted1 (14 ounce) package caramels

5oz evaporated milk

2 cups chopped pecans

32oz cream cheese, softened

1 cup sugar

2 tsp vanilla

4 eggs

1 cup semisweet chocolate morsel, melted and slightly cooled

Instructions

Combine crumbs and butter; blend well. Press into the bottom and 2 inches up the sides of a 10-inch spring form pan. Bake at 350 degrees for 8-10 minutes or until set cool.

In a saucepan over low heat, melt caramels in milk, stirring until smooth.

Cool 5 minutes. Pour into crust, top with 1 1/2 cups of pecans. In a mixing bowl, beat cream cheese until smooth. Add sugar and vanilla, mix well.

Add eggs, one at a time, beating well after each addition.

Add chocolate mix just until blended. Carefully spread over pecans. Bake at 350 degrees, 55-65 minutes or until filling is set. Cool to room temperature. Chill 8 hours
