Lime Cheesecake Recipes

 

Oh my gosh, did someone say Margarita cheesecake? No worries, you wont be failing any sobriety tests after enjoying a slice of heaven. In fact, these cheesecakes are so delicious you probably wont be driving anywhere after a helping or two.

Key Lime Cheesecake

Ingredients

1 8oz pkg soft cream cheese

1 14oz can of sweetened condensed milk

1 12oz container of frozen whip topping

1 cup fresh lime juice (squeeze at least 5 limes)

1 baked 9” pie shell

Lime slices or fresh mint leaves for garnish

Instructions

In a big bowl mix up the cream cheese, milk, and whip topping. Then add the lime juice until its thick and smooth. Immediately pour mixture into pie shell and put in fridge for at least 2 hours. Garnish and serve.

Margarita Cheesecake

Ingredients

7 tbsp butter (cut into pieces)

4-5 limes and 1 orange

65 vanilla wafers

32 oz soft cream cheese

1 ¼ cups sugar

¼ tsp salt

4 large eggs

8 oz sour cream

¼ cup orange juice

Orange and Lime slices for garnish

Instructions

Preheat your oven to 350 degrees and wrap 10”x 2½” pan with foil and melt butter in oven. From the limes grate ½ tsp and 2 tsp peel. Squeeze ½ cup juice. Next grate ½ tsp orange peel. Finely grind all 65 wafers and mix in the 2 tsp lime peel until it becomes a crumb mixture. Stir into pan containing melted butter and press into pan. Bake 15 minutes and cool the crust.

In a large bowl beat the cream cheese, salt and sugar well. Add eggs one at a time at a lower speed. Once mixed add the sour cream, orange juice, orange peel, lime juice and remaining 1 tsp lime peel and mix until smooth. Pour mixture into cooled crust and bake 45 minutes. Turn off your oven and crack the door, leaving the cheesecake inside for one hour. Remove and cool completely. Chill and serve.


Tip: Make sure ALL of your ingredients are at room temperature for best results.
