Whip cream cheese until soft and fluffy (by hand or low speed). Add sugar and peanuts at low speed then add the milk and continue mixing until thick but smooth. (Mixture may be slightly chunky if using chunky peanut butter. Add mixture to pie crust and sprinkle with chopped nuts. Freeze until firm. Take cheesecake out of freezer approximately ½ hour before serving.
Filling: In a large bowl combine the cream cheese and sugar until smooth. Add the peanut butter and vanilla and mix until smooth. Add the rum and cream, then the eggs two at a time slowly. Pour into crust and bake 20 minutes. Every 20 minutes after this turn the oven down 50 degrees until you hit 200 degrees. Look for the edges to become crusty and the center jiggles. Remove and cool. Once cooled chill for 4 hours.
Topping: Melt chocolate and immediately whisk sour cream into mixture. Spread evenly on top of cake and chill so topping can set.
