Mini Cheesecake Recipes

 

What a cute treat these are, and they're delicious too! How clever of someone to shink these wonderful gifts from god, so that I may fit them in my pocket if I want. Individual and mini cheesecakes can make the perfect party treat. They're appealing and hard to keep stocked. Your oven can fit many, try it!

Fruit Filled Mini Cheesecakes

Ingredients

36 muffin cups

32 oz soft cream cheese

1 ½ cups sugar

4 large eggs

2 tsp vanilla extract

36 vanilla wafers

1 can (21 oz) of each cherry, blueberry, strawberry pie filling

Instructions

Line up all 36 muffin cups and place a wafer in each. Preheat the oven to 350 degrees. Beat the cream cheese in a medium bowl until it’s creamy. Add the sugar, and eggs one at a time. Stir in the vanilla extract and mix well. Spoon the mix into the baking cups, over the wafers until almost full. Bake 15 minutes. Leave in pans and chill for 8 hours. Place a tbsp of pie filling on top of each cake before serving. Serves 36

Plain Individual Cheesecakes

Ingredients

Crust:

1/3 cup graham cracker crumbs

1 tablespoon white sugar

1 tablespoon margarine, melted

Filling:

1 (8 ounce) package cream cheese, softened

1/4 cup white sugar

1 1/2 teaspoons lemon juice

1/2 teaspoon grated lemon zest

1/4 teaspoon vanilla extract

1 egg

Instructions

Preheat oven to 325 degrees. Grease a 6 cup muffin pan or put the muffin liner.

In a medium bowl, mix together the graham cracker crumbs, sugar and margarine with a fork until combined. Measure a rounded tablespoon of the mixture into the bottom of each muffin cup, pressing firmly. Bake for 5 minutes then remove to cool but keep the oven on.

Beat together the cream cheese, sugar, lemon juice, lemon zest and vanilla until fluffy. Mix in the egg.

Pour the cream cheese mixture into the muffin cups, filling each until 3/4 full. Bake at 325 degrees for 25 minutes. Cool completely in pan before removing. Refrigerate until ready to serve. Serves 6


Tip: Before serving remove from muffin cups and arrange on decorative plate, or travel to your destination first, then remove from cups.
