Mmmm…Enjoy this delicious cheesecake without feeling guilty. It’s low-carb and low-fat, but I bet you won’t even be able to tell. TIP: For a creamier textured cheesecake, bake at 300 degrees for 1 hour and 20 minutes.

Ingredients
3/4 cup teddy bear-shaped chocolate graham cracker cookies, crushed
Butter flavored cooking spray
24 oz fat free cream cheese, softened
1 1/2 cups sugar
3/4 cup egg substitute
1 cup semi sweet chocolate morsels, melted
1/4 cup unsweetened cocoa
1 1/2 teaspoons vanilla
1 (8oz) carton non fat sour cream
1 (21-ounce) reduced calorie cherry pie filling
3/4 cup reduced calorie frozen whipped topping, thawed |
Instructions
Spread cookie crumbs on bottom of a 9 inch springform pan coated with cooking spray; set aside. Beat cream cheese at high speed with an electric mixer until fluffy; gradually adding sugar, beating well. Gradually add egg substitute, mixing well. Add melted chocolate, cocoa, vanilla, mixing until blended. Stir in sour cream. Pour into prepared pan. Bake at 300 degrees for 1 hour and 40 minutes. Remove from oven; run knife around edge of pan to release sides. Let cool on wire rack; cover and chill at least 8 hours. Removes sides of pan, and spread with cherry pie filling. Add whip cream to each serving. |

Ingredients
Crust:
1 1/2 cups graham cracker crumbs
1/4 cup butter, melted
1/4 cup granulated sugar
1/4 cup unsweetened cocoa powder
Filling:
24 oz cream cheese, softened
1 1/2 cups granulated sugar
4 large eggs, at room temperature
1/4 cup amaretto liqueur
1/4 cup maraschino cherry juice
Topping:
4 ounces (2/3 cup) semisweet chocolate, melted
1/2 cup sour cream |
Instructions
Preheat oven to 325 degrees. Combine graham cracker crumbs, sugar, cocoa powder and butter. Mix well. Press into bottom and 1-inch up the sides of a 9-inch springform pan. Set aside. With an electric mixer on medium speed, beat cream cheese until fluffy. Gradually add sugar, mixing well. Add eggs, one at a time, beating well after each addition. Stir in amaretto and cherry juice until well blended.
Pour filling into crust. Bake 1 hour. Turn oven off, and let stand in oven with door slightly open for at least 1 hour. Remove from oven to wire rack. Cool about 1 hour, or until room temperature. Combine melted chocolate and sour cream. Spread evenly over top of cooled cheesecake. Chill overnight. Garnish with whipped cream.
